Anyone who works in an establishment that deals with food should have a basic understanding of the principles of food hygiene and safety. In industries such as catering and food delivery, it is essential that any food safety hazards can be identified and that waste is managed efficiently.This Level 1 Food Hygiene and Safety Course is for employees who don't handle food directly, but work in an environment where food is handled. Each training module is designed to address the introductory key elements of food hygiene and safety; from food hygiene and safety laws to safety control measures, personal hygiene, and food safety hazards.
By the end of the course, you'll have an excellent understanding of how to ensure food safety in the workplace and how to comply with food health and safety legislation. Please note that if your job requires you to handle food, then you will need to take a Level 1 Food and Hygiene Safety Course in addition to this one.

The course is divided into 5 accessible, interactive modules and includes an assessment at the end.
- Introduction to Food Hygiene - Course overview, what is the format of the course? what will you learn, course curriculum, introduction to food hygiene, food safety - why is it important? food safety why is it important? food handling and the law, key terminology, key terms, food safety & the law, legislation, summary of legal responsibilities, food-borne illness, food-borne illness - those most at risk, what have you learned.
- Food Safety Hazards - Introduction, the four main hazards, allergenic hazards, common allergens, allergen laws, chemical hazards, physical contamination, microbiological hazards, contamination, cross-contamination, contamination controls, good practice examples, good practice examples, high and low-risk foods, storage conditions, stock rotation, handling food, reporting hazards, what have you learned.
- Food Safety Controls - Introduction, destroying microorganisms, the danger zone, time and temperature controls, how to control bacteria with time, cooking and reheating, time and temperature controls, refrigeration, refrigerator temperatures, frozen food, freezers and frozen good, Deliveries, pests, pest prevention, what have you learned.
- Personal Hygiene - Introduction, hand hygiene, hair, body & bad habits, protective clothing, reporting of illness, cuts and sores, what have you learned.
- Cleaning Activities - Introduction, topics to be covered, responsibilities of the food handler, waste management, cleaning and disinfection, safe cleaning, clean as you go, dishwashers, cleaning schedules, what have you learned.
Assessment
At the end of the course, there will be an online assessment, which you will need to pass to complete the course. Answers are marked automatically, allowing you to know straight away whether you have passed. If you haven't, there's no limit on the number of times you can take the final exam.
