Before mass refrigeration, smoking and curing were crucial to preserving food for longer periods of time. At Cooks Academy we are really into harnessing these techniques and spreading the gospel to stop these skills disappearing. We smoke fish, fowl, vegetables, fruit - nothing phases us! Once you experience the sheer pleasure of smoking (food, that is) you'll never give it up! We also teach you easy techniques to smoke and cure using the equipment you already have.
