    Course details

    This workshop will provide an opportunity to learn about development in the area of gluten-free food products, selection of ingredients and processing, dough rheology, baking and recent development in baking technology. The training will help food and health professionals handle celiac patients carefully.

    Objectives

    At the end of the course, participants will be able to:

    • Understand the science behind the action of yeast in baking
    • Understand the dough rheology and its importance for bakery products and selection of ingredients
    • Understand and be able to describe the steps used in baking bread on an industrial scale
    • Understand the importance of gluten-free bakery products for celiac
    • Gain knowledge about the latest development in baking process and gluten-free bread technology

    Participants

    Food/nutrition/health-related scientists, food/health regulatory and standards officials, managers in food industries, quality control and assurance personnel, representatives of consumer associations and communication experts.

    Pre-requisites

    It is desirable for participants to have basic knowledge of chemistry, food science or nutrition.
