    The Level 1 Certificate in Food and Beverage Service is for candidates who want to begin a career within the hospitality industry, specialising in restaurant operations. Candidates will wish to progress as a qualified member of the food and beverage team, and will be able to demonstrate the ability to perform practical skills and have the necessary knowledge in order to complete the assessments.

    On completion of this qualification candidates may progress into employment as a trainee in the food and beverage area, or continue the academic pathway to Level 2 Diploma.

    MODULE OUTLINE

    Safety at Work

    The aim of this unit is to enable learners to develop basic knowledge and understanding of the principles of health and safety in a hospitality and catering environment. The unit also introduces the common hazards in the workplace and immediate action to be taken to ensure a healthy and safe workplace, and it also covers the fire and emergency procedures.

    Customer Service in the Hospitality and Catering Industry

    The aim of the unit is to enable learners to deal effectively with customers using a range of service techniques in a variety of situations in the hospitality industry.

    Food and beverage service skills

    The aim of this unit is to enable learners to develop the basic skills and knowledge to provide the necessary pre-service and service of food and beverages. In this unit the learner will learn about table service and counter service.

    Hot and cold beverage service skills

    The aim of this unit is to enable learners to develop the knowledge and skills to prepare and serve a range of hot and cold beverages. The unit also develop an understanding of the service techniques used for different drinks.

    Menu knowledge

    The aim of this unit is to introduce the basic menu knowledge. It enables learners to understand the principles and purposes of menus and the information required to advise customers on food and beverage menus.

    Introduction to the hospitality and catering industry

    The aim of this unit is to enable learners to develop a broad understanding of the hospitality and catering industry. Learners will explore the broad structure of the industry, types of operations and establishments within the sectors.

    ENTRY & GRADUATION REQUIREMENT FOR THE PROGRAMS

    The pre-requisites for Level 1 Certificate in Food & Beverage Service

    • 16 years old and above; and
    • Two GCE "N" level with a pass in English or equivalent; or
    • For International Students, they must complete Secondary School education or equivalent with a pass in English.

    Other qualifications will be considered on a case-by-case basis.

    Graduation Requirement

    In order to be conferred the certificate, the student must achieve a pass for Examination and Practical Assessment from City & Guilds, (UK), and at least 75% of class attendance. Student’s Pass Holders are required to maintain a class attendance of 90% and above.

    Examination

    Examination is conducted at the end of the course upon completion of all modules. C&G, (UK) Examinations will be conducted in June and November.
