Unit 3: Pest, Waste and Maintenance Requirements

  • Identification of Pest, Waste and Maintenance Control Measures

Unit 4: Chemical Control & Housekeeping

  • Cleaning Chemical Procedures and Record keeping

Unit 5: HACCP - Hazard Analysis Critical Control Point

  • Knowledge in the upkeep of the HACCP Food Safety System

Unit 6: HACCP & Food Delivery Control

  • Delivery Hazard Analysis, Control and Record Keeping

Unit 7: HACCP & Food Storage Control

  • Storage Hazard Analysis, Control and Record Keeping

Unit 8: HACCP & Food Processing Control

  • Hazard Analysis, Control and Record Keeping requirement at Food Preparation, Cooking, Cooling, Reheating, Holding and Service of Food
