Aim: The foundation module is designed to provide you with the grounding in the essential elements that will flow through the course modules.
The program will provide you with the basic building blocks in:
- food handling, preparation and food safety.
- Topic on bakery maths lays the foundations for recipe construction and production planning.
- Baking commodities helps you identify the common ingredients used in baking.
Baking process and processing parameters covers basic baking science in preparation of bakery products and the, WSQ Food Handles program gives you the entry level hygiene certificate to work in the industry.

- Baking Industry.
- Manufacturing Practices(GMP) , HACCP.
- Hygiene & Safety.
- Bakery maths – Bakers Percentage.
- Baking commodities, equipment requirements.
- Introduction to Baking Science.
- Introduction to the baking process and processing parameters. Aeration principles, chemical, biological & mechanical.
- Follow food and beverage safety and hygiene policy procedure (WSQ)
