The purpose of this 3.5 hour food hygiene and HACCP Food Safety Training Programme is to introduce and/or refresh staff in HACCP Food Safety and Good Hygiene Practice required in a business

Content

Unit 1: Food Hygiene

  • Understand the importance of Food Hygiene and HACCP Food Safety

Unit 2: Personal Hygiene Requirement

  • Demonstrate and maintain high standards of personal hygiene

Unit 3: Hand Hygiene

  • Perform Hand Hygiene to HSE/SARI guidelines

Unit 4: Pest/Waste Controls

  • Maintain work areas and follow procedures

Unit 5: Chemical & Housekeeping Control

  • Use cleaning chemicals an equipment correctly

Unit 6: HACCP - Hazard Anyalysis Critical Control Point

  • Introduction to the HACCP Food Safety Management System required

Unit 7: HACCP and Food Delivery Controls

  • Delivery Hazard Analysis and Control

Unit 8: HACCP and Food Storage Controls

  • Storage Hazard Analysis and Control

Unit 9: HACCP and Food Processing Controls

  • Hazard Anaysis during Food Preparation, Cooking, Cooling, Reheating, Holding and Service of Food
