    Overview:-This unique programme is designed for students who see work as part of their recovery process. The goal of this programme is to help people with barriers to training and employment take to first steps towards a job in hospitality industry.

    About: - The chefs assistant programme builds a strong foundation that allows you to further specialize as you progress in your career in the culinary industry. You will study sustainable and safety as well business and management principals. The course of study gives you the knowledge and hands on skills needed for entry level positions in hospitality, cruise, ships and more.

    Who is this course for?

    Intended for those who would like to develop a high standard of foundation cookery skills and stimulate interest for employment opportunities such as catering for private functions, sports and leisure centres, public houses, restaurants and hotels.

    What are the entry requirements for the course?

    Over 16. A good understanding of the English language is essential. Minimum qualification 12th pass\

    What will I study on this course?

    The course comprises:- classical and modern cookery ,meat preparation; vegetarian cookery; bakery, confectionery and patisserie; flamb� Cuisine covered (French, Italian, Indian, American, Chinese, Thai, Arabic, Mexican and other world famous dishes), prepare mise-en-place, demonstrate baking techniques, mixing methods and piping skills, prepare pre-mix, frozen and bake-off products , prepare breads , prepare basic cakes, prepare short-crust pastry, prepare icing, chocolate and glazes, prepare sweet and savoury fillings, sauces and creams , prepare Pan Asian desserts, prepare puff pastries , prepare yeast-raised pastries , prepare choux pastries , prepare cafe, style breads , bake artisan bread , develop ice cream recipes , design contemporary plated desserts , prepare marzipan decorations, fondant cakes, fabricate chocolate decorations, prepare macaroons , prepare advanced confectionery , prepare advance tarts , master sugar work techniques , hot and cold beverages; coffee preparation; and molecular gastronomy

    What qualification will I gain?

    1 year diploma from cook and bake academy (under hospitality educational society registered act of 1860)

    To quality for chef Assistant programme, individual must complete 8 month training & 4 months industrial training and maintain 80% of class attendance.

    Continuous assessment, practical and written examinations
