    Course Description

    Overview

    The purpose of this award is to equip the learner with the knowledge, skill and competence to serve a range of beverages independently under supervision.

    Requirements

    The requirements for entry to the Beverage Services 5 Minor Award are, Leaving Certificate standard or equivalent qualifications or FETAC/QQI Level 4 Certificate and/or relevant life and work experiences.

    Course

    The following content will be covered in this course:

    • Identifiy the main brands of Irish and international spirits, beers and liqueurs, popular aperitifs, digestifs, cocktails, speciality teas and coffees
    • List the principal classes of red, white and rose wines, key wine producing countries and their respective classification systems
    • Explain the general principles of wine and food pairing
    • Describe the procedures to be implemented for the responsible service of alcohol
    • Explain the sequence of bar, lounge and wine service
    • Organise wine stores, beverage stores and cold rooms to ensure that all stock is stored appropriately, safety and in accordance with the general principles of stock management
    • Serve the full range of alcoholic, non alcoholic beverages and garnishes in a licensed premises including the correct procedure for opening and serving all categories of wine
    • Serve a range of food and accompliments, maintaining tables and counter areas
    • Demonstrate the correct procedures for cleaning, using and maintaining all bar equipment, technology and glassware including beer dispensing equipment
    • Use current technology in a licencsed premises including electronic ordering, EPOS (electronic point of sale equipment), table management systems, stock management systems
    • Identify the steps involved in effective selling, to include: customer perception of the product, menu product knowledge, effective communication and sales skills and identification of unique selling points
    • Implement billing, pricing and cashing up procedures including tabs, methods of payment, till systems and float systems, explaining bills to customers
    • Comply with all current hygeine and safety legislation and regulations in personal and work practices
    • Demonstrate respect for diversity in lifestyles, religion, ability and culture with colleagues and customers

    Assessment

    The assessment process includes a combination of module appropriate assessment procedures which will facilitate the assessment of learning outcomes of this course. These methods will include continuous assessment processes such as:

    Assessment Format: kills Demonstration 70% / Examination 30%

    Skills Demonstration – A skills demonstration is used to assess a wide range of practical based learning outcomes including practical skills and knowledge. A skills demonstration will require the learner to complete a task or series of tasks that demonstrate a range of skills.

    Examination – A supervised exam will take place at a time to be confirmed by the tutor. This will be a supervised exam after the completion of the module. This which will assess the learners ability to recall, apply theory and show an understanding of the different concepts drawn from the module.

    Grading: Pass 50% – 64% / Merit 65% – 79%/ Distinction 80% – 100%

    Progression?

    On successful completion of this Beverage Services course, the participant will have achieved one of eight modules which lead to a Major Award in Bar and Restaurant Services Level 5
