Course details
City & Guilds has over 120 years of experience in identifying training needs, developing assessment materials, carrying out assessments and training assessment staff.
This course is intended for people who wish to work in the hospitality industry and already have knowledge of the basic principles of kitchen work, or who can demonstrate commitment and enthusiasm to work and study in order to supplement their existing knowledge.
Entry Requirement:
- 16 years old and above
- "N" level or 10 years of formal education or equivalent qualification
Course Learning Outcomes
At the end of the course, students should be able to:
- prepare food for cold presentation
- understand the safety at work
- understand food safety in catering
- understand healthier foods and special diets
- prepare, cook and finish stocks, soups and sauces
- prepare, cook and finish fish and shellfish dishes
- prepare, cook and finish meat, poultry and offal
- prepare, cook and finish vegetables, fruit and pulses
- prepare, cook and finish rice, grain, farinaceous products and egg dishes
- prepare, cook and finish bakery products
- prepare, cook and finish hot and cold desserts and puddings
- understand catering operations, costs and menu planning

Assessment
Practical Competencies
Candidates are tested through ongoing practical skills assessments/ assignment.
- It will be a progressive practical assessment test
- Prepare Portfolio + Logbook for practical
Knowledge Requirements
A two hours multiple choice 50 questions test for each:
- Food Safety in Catering
- Culinary arts Principles
Graduation
Course Completion and Award Criteria
- Passed theory assessments and completed logbook & portfolio.
- 90% class attendance for entire course (international students)
- 75% class attendance for entire course (all other students not on ICA's student pass)
Students who fulfill the above criteria will be awarded the “Level 2 IVQ Diploma in Food Preparation and Cooking (Culinary Arts)” by City and Guilds, UK.
