Course details

The course is designed specifically for proprietors, operations managers, risk managers, kitchen managers, food supervisors or food team leaders from the food service sector. No prior knowledge of food safety auditing is required although delegates should have achieved a Level 2 or Level 3 Food Hygiene Qualification or equivalent.

A one day course introducing the 6 point 'Audit Cycle', delegates will learn the practical skills and techniques required for auditing their own food establishments and how to report and action the outcomes. The course includes a refresher on the principles of HACCP based Food Safety Management Systems, legislative requirements and will give delegates the confidence to report on their own in-house or contracted facilities and will ultimately assist in improving food safety performance. The one day trainer led course does not culminate in an exam but a practical exercise held within the NHI kitchen facilities helps consolidate learning and provides a realistic and stimulating environment. Acertificate of attendance is provided.
